Our USDA Prime Brisket is smoked for 15 full hours until the bark turns dark and peppery, a deep smoke ring settles beneath it, and the centre becomes buttery, juicy and pull-apart tender.
This is not dry, stiff brisket that makes you work for every bite. It is rich, smoky beef that folds under its own weight and melts across the tongue.

It Should Bend Before It Breaks
A proper slice of brisket should drape over the fork, pull apart with gentle pressure and never fight back.
Our upgraded smokers and dedicated pit crew hold the cook steady for 15 hours, giving the USDA Prime marbling time to render slowly through every slice.
The result is a smoke-darkened bark, juicy centre and deep beef flavour that lingers long after the plate is empty.
